Macchiaiola Maremmana Prosciutto is distinguished by its "elongated pear" shape and by the "leg" with black nails that characterise the breed. The weight of each whole bone-in ham ranges from 8 to 10 kg. The slice has a perfect balance of fat and muscle, which is characteristic of animals reared in the open air in large areas. The natural purple colour of the meat is intense and enhanced by the marbling that preserves the original flavour and taste. The fatty part has a pinkish-white colour tending towards pink. The temperature of the environment enhances and accelerates its brightness by activating the melting process of monounsaturated fats. It has a soft and pleasant flavour with a perfect balance and interaction between the fat part and the lean part, which leave stimulating and surprising aftertastes in the mouth.
